I used gluten free Tapioca Bread and learned a new lesson about gluten free cooking.
Here is what I learned. Don’t soak the bread in your egg mixture and let it set. Its gets really mushie and you won’t be able to do anything with it. Get your frying pan hot, make sure its non-stick and add spray or butter, then dip your gluten free bread in the eggy slop and toss it in the pan, brown it to perfection and eat.
I love peanut butter, so I pile it on! Thank goodness peanuts are gluten free.
